Bombay Brasserie, the modern Indian brasserie operated by Charcoal Concepts, has appointed K. Riju Nair as its new Brand Head. Nair will lead the brand's ambitious expansion across India, targeting a portfolio of more than 41 restaurants within the next eight years. The growth plan centres on the launch of Bombay Brasserie 2.0, a refreshed concept designed to elevate customer experience, streamline operations, and boost long-term profitability.

Nair brings 26 years of experience in brand management and business development across India, the UK, Bahrain, and Oman. His previous roles include Chief Operating Officer at Living Liquidz, where he delivered a 12% increase in same-store sales, and leadership positions at 1441 Pizzeria, Yum India, and Pizza Hut UK. His track record in scaling F&B brands across diverse markets aligns with Bombay Brasserie's growth ambitions.

Bombay Brasserie 2.0: A new dining blueprint

The 2.0 format will debut at a designated outlet, setting the template for future openings. Key features include open-fire grills, live cooking stations, and a dedicated cold kitchen, enabling a versatile dining experience from breakfast through dinner. A new coffee station will also be introduced, reinforcing the brasserie's all-day positioning.

The 12th Bombay Brasserie, slated to open at The Ecoworld Bangalore, will be the first to implement this new philosophy. As the brand scales, it aims to maintain consistency while adapting to local markets and guest preferences. Nair's vision is to translate this evolution into a scalable and sustainable business model, ensuring the brand's progressive Indian identity remains intact.

This expansion comes at a time when India's dining and hospitality sectors are seeing renewed investment. The move also aligns with broader travel and tourism trends, as international carriers like Air India and Singapore Airlines deepen their codeshare to capture growing outbound and inbound traffic. For travel professionals, the growth of homegrown F&B brands like Bombay Brasserie signals increased opportunities for hotel partnerships and destination dining experiences.

Nair's appointment underscores the brand's commitment to operational excellence. His experience in both corporate and entrepreneurial settings will be critical as Bombay Brasserie navigates the complexities of multi-location expansion. The brand's focus on live cooking and interactive dining is expected to resonate with modern consumers seeking experiential meals.

Industry observers note that the 2.0 concept could set a new benchmark for Indian casual dining. By integrating open kitchens and specialised stations, Bombay Brasserie aims to differentiate itself in a competitive market. The brand's ability to scale while preserving quality will be key to its success.

For travel trade partners, the expansion offers potential tie-ins with hotel F&B programmes and curated culinary tours. As India's domestic travel market grows, restaurant brands that deliver consistent, high-quality experiences are well-positioned to capture both local and tourist demand.

Nair's leadership will be closely watched as Bombay Brasserie rolls out its 2.0 format. The brand's long-term goal is to become a leading player in India's modern Indian dining segment, with a model that can be replicated across cities. With a clear roadmap and experienced leadership, the company appears poised for sustained growth.
