The Grand Copthorne Waterfront Hotel Singapore is set to launch the Thailand Flavourscape Buffet, running from 13 July to 23 August 2026. This culinary event, backed by the Royal Thai Embassy Singapore, brings together three chefs to showcase Thailand's regional cuisines at the hotel's Food Capital restaurant.

Chef Lineup and Regional Focus

The buffet features Nawamin "Boss" Pinpathomrat, a MasterChef UK finalist; Chef Witoon Kamonphun from M Social Hotel Phuket; and Executive Chef David Toh of Grand Copthorne Waterfront Hotel Singapore. Together, they present a menu spanning northern, central, and southern Thai flavours.

Diners can expect dishes such as Grand Tom Yum Goong, Andaman Seafood Curry with Betel Leaves, and Wagyu Massaman Curry. Live stations will serve Thai Boat Noodles and Moo Ping Pork Skewers. Desserts include Mango Sticky Rice and Thai Tea Mousse Cake.

This collaboration highlights the growing trend of hotel-led culinary events in Singapore, a key market for regional tourism. The Grand Copthorne Waterfront, part of the Millennium & Copthorne Hotels group, continues to leverage its F&B offerings to attract both local and international guests.

Additional Offerings and Pricing

The Lobby Lounge will host a Thailand Flavourscape Afternoon Tea, featuring an AI-powered wellness assessment and personalised herbal tea recommendations. A Tiffin Lunch Set inspired by Thai comfort food is also available.

Pricing for the buffet is S$72++ for lunch and S$106++ for dinner on weekdays, with special rates for children. The event aims to provide an immersive cultural experience for Singaporeans and visitors alike.

For travel professionals, this event underscores the importance of F&B as a differentiator in the competitive Singapore hospitality market. Similar initiatives, such as the Hua Hin Marriott Resort & Spa's July dining series, demonstrate how hotels use themed buffets to drive occupancy and local patronage.

The collaboration also reflects broader trends in culinary tourism, where destination-specific menus attract travellers seeking authentic experiences. The Royal Thai Embassy's involvement adds a layer of cultural authenticity, potentially boosting Singapore-Thailand travel ties.

As Singapore's hotel scene evolves, properties like the Grand Copthorne Waterfront are investing in unique dining concepts to stand out. The upcoming Hari Singapore and other new entrants will further intensify competition, making such events crucial for brand positioning.

For agents and tour operators, the Thailand Flavourscape Buffet offers a packaged experience that can be marketed to clients interested in Thai cuisine without leaving Singapore. The event runs through August, aligning with summer travel periods.
