Park Hyatt Bangkok has appointed Tomoya Sugizaki as Chef de Cuisine at its Penthouse Grill, a move that signals a refined culinary direction for the property's signature dining venue. Sugizaki brings more than 23 years of experience within the Park Hyatt brand, most notably from his long tenure at Park Hyatt Tokyo's New York Grill, where he honed his craft in contemporary grill cuisine.

His career began at Park Hyatt Tokyo in 2003, and he has since become known for his commitment to culinary innovation and mentorship of emerging talent. Prior to his arrival in Bangkok, Sugizaki served as Chef de Cuisine at Park Hyatt Siem Reap, further expanding his regional expertise.

A menu that bridges traditions

The new menu at Penthouse Grill reflects Sugizaki's philosophy of seasonality and balance, offering dishes that are both familiar and distinctive. Signature starters include King Crab Waldorf Salad, Hokkaido Scallop Ceviche, and Foie Gras Terrine. For mains, the chef presents a 600-gram Westholme Wagyu L-Bone and a 400-gram aged Bluefin Tuna, alongside Miso-Glazed Sloane's Pork Chop and Grass-Fed Lamb Chops.

“Bangkok is a dynamic dining destination, and I am delighted to join the team at Park Hyatt Bangkok,” Sugizaki said. “I look forward to bringing my experience to Penthouse Grill, working with exceptional ingredients and creating dishes that guests will want to return to.”

Penthouse Bar + Grill occupies the upper levels of Park Hyatt Bangkok, offering panoramic city views and a collection of unique dining spaces. The introduction of Sugizaki's menu is expected to elevate the restaurant's established grill experience, giving both hotel guests and local diners a fresh perspective on high-end steakhouse dining.

This appointment comes as Bangkok's luxury hospitality scene continues to evolve, with several new openings and culinary investments across the city. For travel professionals, the move underscores the importance of chef-driven concepts in differentiating hotel F&B offerings, particularly in competitive markets like Thailand's capital.

Park Hyatt Bangkok has been a key player in the city's upscale hotel segment since its debut, and the addition of a chef with Sugizaki's pedigree is likely to attract attention from both gourmands and corporate clients seeking premium dining experiences. The property's location in the central business district also positions it well for business travelers and MICE groups looking for high-end venues.

As Bangkok prepares to host major events like the IMF-World Bank meetings and the World Travel & Culture Expo 2026, the city's hoteliers are investing in culinary talent to cater to an increasingly discerning international audience. Sugizaki's arrival is part of this broader trend, reinforcing the city's status as a regional gastronomic hub.

For agents and tour operators, the new menu at Penthouse Grill offers another compelling reason to recommend Park Hyatt Bangkok to clients seeking a memorable dining experience. The restaurant's combination of panoramic views, refined ambiance, and now a chef with a global reputation makes it a strong selling point for luxury travel packages.
