Florie's, the signature restaurant of Mauro Colagreco at Four Seasons Resort Palm Beach, has announced a season-long Wine Dinner Series running from October 2026 through May 2027. The program will spotlight celebrated wine regions and estates, including Gérard Bertrand, Harlan Estate, and Château Lafite Rothschild, culminating in an exclusive Opus One finale.
Each dinner pairs a four-course menu crafted by Chef Colagreco with wines selected to reflect their origins and stories. The evening begins with a welcome pour and canapés on Florie's terrace, followed by an intimate dinner in the Private Dining Room. Seating is limited to 24 guests per event, with the Opus One finale capped at just 12.
Chef Colagreco emphasized the philosophy behind the series: "Wine has an extraordinary ability to express a sense of place... For each dinner, we begin with the wine, its origin, its character, its story, and create a menu that responds to it."
Schedule and featured estates
The series opens on 29 October with a Bordeaux tour featuring selections from Bernard Magrez. Subsequent events include a South of France exploration with Gérard Bertrand on 18 November, a dedicated evening to Harlan Estate on 9 February, and the finale on 20 May focusing on Opus One's Napa Valley legacy.
This initiative aligns with a broader trend in luxury hospitality where dining experiences are elevated through exclusive partnerships. Similar programs, such as Regent Seven Seas' tasting and pairing program, underscore the growing demand for curated gastronomic journeys.
For travel professionals, the series represents a compelling selling point for clients seeking high-end culinary experiences in South Florida. The limited seating and exclusive access to legendary wine estates make it a distinctive offering for luxury travel advisors and concierge teams.
Florie's, which opened in 2022, has quickly become a destination dining venue under Colagreco's Michelin-starred leadership. The restaurant's terrace and private dining room provide an intimate setting that complements the wine-focused concept.
The Wine Dinner Series is part of a broader push by Four Seasons to enhance its culinary programming across properties. Earlier this year, the brand launched similar initiatives at other resorts, including Chef Hari Nayak's residency in the Maldives, reflecting a commitment to unique, chef-driven experiences.
For agents and tour operators, this series offers a tangible hook for booking Four Seasons Palm Beach during the fall and winter seasons. The combination of a renowned chef, prestigious wine estates, and limited availability creates a sense of exclusivity that appeals to discerning travelers.
As the travel industry continues to emphasize experiential luxury, events like this wine series are likely to gain traction. Hotels and resorts are increasingly leveraging culinary partnerships to differentiate their offerings, a strategy that resonates with high-net-worth clients seeking memorable, one-of-a-kind moments.
