Marriott International's Luxury Group has launched The Liquid City, a cocktail series designed to elevate the fine-drinking experience across Greater China. Running from 19 August through a grand finale on 29-30 August at The Shanghai EDITION, the initiative brings together three acclaimed mixologists from Asia's 50 Best Bars to create bespoke bar menus in six cities and ten luxury properties.

The series is part of the group's Culinary Atelier programme, which already showcases regional cuisine. Now, mixology takes centre stage, with each cocktail crafted to reflect the cultural heritage and native flavours of its host city. From Hong Kong's tea culture to the glamour of Shanghai's golden era, the drinks aim to tell a story of place through glass and garnish.

A line-up of regional talent

The featured mixologists are Amanda Wan from Hong Kong, Hwi Yun from Seoul, and Alvin Sung Jaya from Jakarta. Each brings a distinct perspective, and they will collaborate with resident bartenders at each venue to fuse global techniques with local ingredients. The result is a menu that balances international sophistication with regional authenticity.

Bart Buiring, Managing Director of Luxury Greater China at Marriott International, said: “The Liquid City is a celebration of craftsmanship, cultural storytelling, and culinary innovation.” His comment underscores the group's broader push to position its luxury portfolio as a destination for immersive dining and drinking experiences, not just accommodation.

Signature serves and culinary pairings

Guests can expect curated cocktails paired with small plates at each participating hotel. Highlights include “Pillow Confessions”, inspired by Macau's Portuguese egg tart, and “Night Silk”, a coffee and fig-infused brandy creation in Shanghai. These signature serves are designed to evoke memory and place, appealing to both travellers and local connoisseurs.

The multi-city takeover spans Hong Kong, Shanghai, Macau, and other key markets, reinforcing Marriott's commitment to experiential luxury. The finale at The Shanghai EDITION promises an exclusive weekend of mixology showcases, with masterclasses and tastings led by the guest mixologists.

For travel professionals, the initiative signals a growing trend: luxury hotels are increasingly using food and beverage programming to differentiate themselves and drive local engagement. As wellness and sustainability reshape Southeast Asia's luxury property market, experiential offerings like The Liquid City are becoming a key competitive lever.

Marriott's Luxury Group operates a portfolio that includes The Ritz-Carlton, St. Regis, W Hotels, and EDITION, among others. The group has been aggressive in expanding its culinary and beverage concepts across Asia, often partnering with renowned chefs and now mixologists to create unique guest touchpoints.

The series also reflects a broader industry shift toward craft cocktail culture in Asia, where cities like Hong Kong, Shanghai, and Singapore have become global hubs for mixology. By tapping into this momentum, Marriott is positioning itself as a leader in luxury hospitality's evolving F&B landscape.

For agents and tour operators, The Liquid City offers a new angle for selling city breaks and luxury stays. It provides a tangible, bookable experience that goes beyond standard room amenities, appealing to travellers seeking authentic, locally inspired encounters.

As the series concludes at The Shanghai EDITION, industry watchers will be keen to see whether Marriott extends the concept to other regions. Given the positive reception of similar initiatives, such as Chef Leo Cao's Sichuan barbecue at Bangkok Marriott Marquis, the group appears committed to pushing culinary boundaries across its Asian properties.
