Thailand's rooftop bar scene has evolved beyond simple sundowners, and Meliá Hotels International is leading the charge with three distinct sky-high venues that turn golden hour into a culinary event. From artisan Thai cheese in Chiang Mai to Spanish tapas in Bangkok and wood-smoked Peking duck in Pattaya, these properties demonstrate how hotels can leverage local flavors and panoramic views to create memorable guest experiences.

MAI The Sky Bar: Chiang Mai's Local Cheese and Wine Pairing

At Meliá Chiang Mai, MAI The Sky Bar has introduced a nightly "Artisan Thai Cheese & Wine Pairing" starting at 6 PM. Guests can enjoy a glass of Monsoon Valley wine from Hua Hin alongside a rotating selection of small-batch cheeses from Chiang Mai's Jartisann, which uses locally sourced raw milk and seasonal styles. The 22nd-floor bar offers 360-degree views over the Ping River and Doi Suthep, with a glass bridge connecting its highest seating areas. Recently named a 2026 Tatler Best Spotlight Bar by Tatler Asia, the venue also features signature cocktails like "MAI The Sky"—lychee and vanilla with cava foam—and "Temple," made with Siam Lanna Gin and a Niem-Sompoi cordial linked to spiritual cleansing.

LUZ Bangkok Tapas Bar: Spanish Social Hours Above Sukhumvit

At INNSiDE by Meliá Bangkok Sukhumvit, LUZ Bangkok Tapas Bar brings a Madrid-inspired concept to the capital. From 5 to 7 PM, the bar runs "Social Hours" with two-for-one drinks on selected wines, Chang draught, and signature cocktails such as "Tinto Sour" (bourbon, red wine, lemon, sea-buckthorn rooibos honey) and "Cremoso" (white rum, cava, tiramisu syrup, mascarpone, soy milk). The 34th-floor pool deck features a transparent infinity pool, sunbeds, and lounges, allowing diners on the 33rd floor to watch silhouettes through the glass base. A new menu by Madrid-born chef Juan Ignacio García Racionero highlights regional Spanish styles, from Basque pintxos to Andalusian seafood and rice dishes.

Yitong Chinese Restaurant & Sky Bar: Peking Duck Over Pattaya Bay

On the 12th floor of Meliá Pattaya Hotel, Yitong Chinese Restaurant & Sky Bar offers a "Feast of Flavour" sunset experience centered on traditional wood-smoked Peking duck, Hong Kong style, served from 5 PM with classic accompaniments and views over the Gulf of Thailand. The name Yitong, meaning "together," honors Chonburi's historic Chinese communities, with family-style dishes encouraging shared meals. Cocktails incorporate Chinese ingredients, including "Kuaile De" (goji-infused gin, honey, lemon, cava), "Chun Hou" (brandy, orange curaçao, rosella tea, rose syrup), and "Tian De" (ginseng-infused Campari, Chinese liquor, brown sugar syrup). Non-alcoholic options like "Virgin Chit-Cha Toddy" blend oolong tea with lemon, ginger syrup, and cinnamon.

These three venues illustrate how Thailand's rooftop scene has diversified, offering travel professionals a model for integrating local culture and cuisine into premium guest experiences.
