Novotel Hyderabad Convention Centre is launching a 10-day culinary festival titled Forest & Fire, running from 17 to 26 July at its Food Exchange and Permit To Grill venues. The event, curated by chef Harshita Kakwani, focuses on indigenous Indian ingredients and traditional wood-fire cooking methods.
Festival Highlights and Culinary Direction
The menu features dishes such as Mahua Mushroom Bao, Van Shaak Ravioli, and Hay-Smoked Fish, all built around seasonal produce and techniques drawn from tribal communities. Chef Kakwani, known for her work in reviving forgotten food traditions, aims to spotlight sustainable practices and ingredients that are often overlooked in mainstream dining.
On 18 July, the hotel will host The Craft, a culinary masterclass where participants can learn about indigenous cooking methods and prepare signature dishes under the chef's guidance. This hands-on session is designed for both professionals and enthusiasts interested in India's forest food heritage.
A separate event, The Pour, takes place on 25 July as an exclusive bar takeover. It offers a curated beverage menu inspired by local and forest-derived ingredients, with cocktails that complement the festival's culinary narrative.
The festival also includes themed décor, live music, and a nature-inspired ambience, aiming to create an immersive experience for guests. Novotel Hyderabad's initiative underscores its commitment to culinary innovation and its role in bringing diverse gastronomic traditions to the city.
For travel professionals, this event highlights a growing trend in experiential dining within the hospitality sector, particularly in India's MICE and luxury segments.
