The St. Regis Mumbai is set to host an exclusive two-night culinary residency featuring Toyo Eatery, the acclaimed one-MICHELIN-star restaurant from Manila, on 25 and 26 June 2026. The event, held at the hotel’s Vietnamese restaurant By The Mekong, offers Mumbai’s dining scene a rare taste of contemporary Filipino cuisine without leaving the city.
Chef Jordy Navarra’s Toyo Eatery: A Filipino Powerhouse
Founded by Chef Jordy Navarra in 2016, Toyo Eatery has rapidly risen to prominence for its modern take on Filipino culinary traditions. The restaurant was named The Best Restaurant in the Philippines 2025 and currently ranks No. 71 on Asia’s 50 Best Restaurants 2026 list. Its recognition by the MICHELIN Guide further cements its status as a destination for travellers seeking authentic yet innovative Filipino flavours.
During the residency, Chef Navarra and Head Chef Patch Marce will present a specially curated seven-course menu. The dishes draw on regional Filipino techniques and ingredients, while incorporating subtle nods to Mumbai and Indian culinary traditions. “We aim to offer a deeper understanding of Filipino culture through food,” Navarra said in a statement. The menu is designed to tell a story of heritage, seasonality, and cross-cultural dialogue.
The collaboration is presented in partnership with Elemental, a Mumbai-based events platform that curates immersive dining experiences. The residency is priced at INR 8,000++ (approximately USD 96) per person, with dinner service beginning at 7:30 PM each evening.
This event reflects a broader trend in luxury hospitality: international culinary exchanges that bring Michelin-starred chefs to hotel restaurants for limited engagements. For travel professionals, such residencies offer a compelling reason for guests to book stays and dining reservations, particularly in markets like Mumbai where discerning diners seek novel experiences. The St. Regis Mumbai, part of Marriott International’s luxury portfolio, has previously hosted similar collaborations, reinforcing its position as a culinary destination within the city’s competitive hotel landscape.
For agents and tour operators, this residency presents an opportunity to package dining experiences with hotel stays, especially for clients interested in gastronomic travel. The event also aligns with growing interest in Filipino cuisine globally, as noted in recent Agoda reports highlighting Asia’s hidden culinary destinations for the travel trade.
Mumbai’s status as a MICE and luxury travel hub continues to attract such high-profile culinary events. The city’s hoteliers and tourism stakeholders, including Maharashtra Tourism’s efforts to elevate MICE appeal, benefit from these cross-border collaborations that enhance the destination’s global profile.
As the travel industry increasingly values unique, immersive experiences, the St. Regis Mumbai’s partnership with Toyo Eatery exemplifies how hotels can differentiate their F&B offerings. For airline executives and travel-tech vendors, the trend also signals opportunities for ancillary revenue through dining packages and loyalty programme tie-ins.
The residency is expected to draw food enthusiasts, travel media, and industry professionals, further cementing Mumbai’s place on the global culinary map. With limited seats available, the event is likely to sell out quickly, underscoring the demand for authentic, chef-driven experiences in luxury hospitality.
