Hôtel de Crillon, A Rosewood Hotel, has appointed two-Michelin-star chef Alan Taudon as its new Executive Chef, effective 1 June. The move signals a strategic push to elevate the property’s gastronomic profile, already a cornerstone of its luxury positioning on Place de la Concorde.

Taudon, known for his delicate, seasonal style rooted in marine and botanical influences, will introduce his first dining concept, L'Herbier Secret, this summer. The experience takes place on a previously undisclosed aromatic garden terrace, seating just four to six guests per evening. Running from 12 June to 25 July, Thursday through Saturday, reservations are required. The price is set at $265 (€250) per person, with an optional $148 (€140) wine pairing.

A New Gastronomic Direction for a Landmark Hotel

This appointment is part of a broader vision to refresh the hotel’s culinary offerings. “His arrival marks a new gastronomic direction,” the hotel stated, underscoring the significance of Taudon’s role. The chef’s approach—emphasizing delicacy and seasonality—promises to bring contemporary flair to the menu, aligning with the hotel’s blend of French heritage and modern luxury.

Looking ahead, Taudon plans to unveil an innovative culinary concept in 2027, further cementing Hôtel de Crillon’s reputation as a leader in luxury dining. The property, a Rosewood flagship, continues to attract high-net-worth travelers seeking refined experiences in the heart of Paris.

For travel professionals, this appointment underscores the growing importance of culinary programming in luxury hospitality. Hotels like Hôtel de Crillon are leveraging Michelin-starred talent to differentiate themselves in a competitive market, where dining experiences increasingly drive booking decisions. Similar trends are visible across the industry, as seen in recent developments like Vietnam's Michelin Guide 2026, which highlights the global expansion of fine dining recognition.

Meanwhile, the luxury hotel sector continues to evolve, with properties such as Kove Hotel & Spa Mykonos joining MGallery, expanding Accor’s Aegean portfolio. These moves reflect a broader trend of branded luxury hotels investing in distinctive culinary and experiential offerings to capture discerning travelers.

For agents and tour operators, the launch of L'Herbier Secret offers a unique selling point for clients seeking exclusive, intimate dining in Paris. The limited capacity and seasonal availability create scarcity, a key driver for luxury travel bookings. As the Maldives luxury segment demonstrates with its focus on bespoke experiences—highlighted by SO/ Maldives CEO Olivier Moies-Delval—personalization and exclusivity remain paramount.

Hôtel de Crillon’s investment in culinary talent also mirrors broader industry dynamics, where hoteliers are competing with standalone restaurants for top chefs. The appointment of a two-Michelin-star chef signals a commitment to quality that can enhance the property’s overall appeal, particularly for MICE and incentive travel groups seeking premium dining experiences.

As the travel industry rebounds, luxury hotels are doubling down on gastronomy as a differentiator. Taudon’s arrival at Hôtel de Crillon is a clear example of this strategy in action, with implications for competitors and partners across the hospitality spectrum.
