United Airlines is elevating its inflight dining proposition with the launch of 30 new dishes crafted by world-renowned chefs, debuting 1 August on United Polaris international business class. The initiative, developed in partnership with Chef's Table—the brand behind the Emmy Award-winning Netflix series—aims to bring destination-inspired cuisine to the skies.

Global Chefs, Local Flavors

The menu spans appetisers, salads, and entrées, each inspired by the chef's home city. Notable offerings include burrata with braised leeks by Los Angeles-based Nancy Silverton, Brazilian shrimp stew by São Paulo's Manu Buffara, and poached scallop by Tokyo's Tashi Gyamtso. The collaboration leverages United's extensive global network to source culinary talent from key hubs.

Justin Connor, President of Chef's Table Projects, said the partnership aims to "redefine inflight dining" by bringing the expertise of Chef's Table to passengers. Aaron McMillan, United's Managing Director of Hospitality Programmes, emphasised that the chefs designed menus specifically for the realities of travel, ensuring flavours remain exceptional at high altitudes.

The new dishes will be served on flights departing from the chefs' home cities, with passengers able to pre-order meals through United's website or app. Additionally, exclusive branded content will be available on inflight entertainment systems, offering a behind-the-scenes look at the creation of these menus.

This initiative will continue with seasonal rotations of dishes into 2027, promising a continually evolving dining experience for travellers. For context, other carriers are also enhancing their premium offerings: St. Regis London Debuts in Mayfair This Autumn with 193 Rooms and Curated Art and Akasa Air's Café Akasa Introduces Yoga Day Special Meal Across Network.

The move comes as airlines increasingly compete on soft product differentiation in premium cabins. United's partnership with a high-profile culinary brand signals a strategic push to attract discerning business travellers who value gastronomic experiences. The airline's investment in chef-curated menus aligns with broader industry trends toward personalisation and local sourcing.

For travel professionals, this development underscores the importance of culinary partnerships in driving brand loyalty and premium cabin revenue. As United continues to expand its Polaris network, the ability to offer destination-specific dining could become a key differentiator in the competitive transatlantic and transpacific markets.
