United Airlines is elevating its premium inflight dining with a fresh menu rotation for Polaris international business class, debuting November 1. The carrier has partnered with Chef's Table, the Emmy-winning Netflix series, to bring 30 new dishes from 11 acclaimed chefs across ten cities, reinforcing its push to make onboard cuisine a differentiator in the competitive transatlantic and transpacific markets.
The new lineup spans salads, appetisers, and entrées inspired by United's hub cities and key international gateways. Highlights include Chef Nancy Silverton's spiral meat lasagne, Chef David Barzelay's rack of lamb, and Chef Tomos Parry's roasted pumpkin with rosemary stracciatella. Each dish is designed to reflect the chef's home city, connecting passengers with the culinary identity of the destinations they serve.
This second rotation follows an initial menu launch in August that saw customer satisfaction scores rise nearly 20 points compared to other preordered meals, according to the airline. The positive reception underscores United's broader investment in its food and beverage programme, which has exceeded $150 million in 2025 to enhance the passenger experience.
Preorder and service expansion
United is extending its meal preorder service to more customers, allowing Polaris passengers to select their dishes via the airline's website or mobile app from five days before departure up to 24 hours prior. The service, which has been popular among business travellers, is part of a wider effort to streamline the inflight experience and reduce waste.
Aaron McMillan, United's Managing Director of Hospitality Programmes, emphasised the strategic importance of the collaboration. "Bringing world-class chefs onboard allows us to reflect the destinations we serve and elevate the dining experience for our customers," he said. The airline has also introduced new snackboxes and enhanced its onboard wine programme, complementing the chef-driven menu.
Justin Connor, President of Chef's Table Projects, expressed enthusiasm for the partnership, noting that it gives travellers a taste of the chefs' unique culinary perspectives. "This initiative connects cuisine with place, offering passengers a sensory journey before they even land," he added.
The menu is available across United's Polaris international routes, including major gateways like London Heathrow, Tokyo Narita, and Frankfurt. The airline's investment in premium dining comes as competitors such as Delta and American Airlines also ramp up their own chef collaborations, making inflight food a key battleground for loyalty among high-yield travellers.
United's broader hospitality push extends beyond the cabin. The carrier recently opened the Terminal B North Concourse at Houston's George Bush Intercontinental Airport, a project that includes expanded Polaris lounges and enhanced dining options. For travel professionals, the move signals a continued focus on premium experiences as a driver of revenue and customer retention.
As the industry watches how airlines differentiate their business class offerings, United's chef-curated approach—backed by measurable satisfaction gains—offers a case study in leveraging culinary partnerships to boost brand perception. The new menu is now available for preorder, with the full rollout set for November 1.
